To start a new week I will share my latest discovery, who knows many of you already know but for me it is a revolutionary and versatile recipe, to be repeated by changing the ingredients. The legendary source is 101 Cookbooks, I opened a small new world cereal grains cook in the oven. For me, I love cereal, so as nature made them, change the cooking method, leaving for a while by the usual winter soups, healthy, but have a little unconventional, it was a revelation.

The recipe I am proposing is with pearl barley, but the original is spelled with, I tried, and I have to admit that perhaps is better.
Prepare a simple sauce, tomato and onion, I always bake it so I can also be used to season the day after a plate of pasta or add to the happy chicken, stewed in the pot.
Then you lightly fry the onion and oil in a pan, then add the barley (about 50 grams per person) for a few minutes and then finally 300 grams of tomato sauce.
here I've also added delle verdure, zucchine e broccolo verde tagliati a pezzettini . Lasciare bollire tutto insieme a 600 ml di brodo per qualche min. Aggiungere un paio di manciate abbondanti di parmigiano grattugiato.
Intanto scaldare il forno a 200° circa, ungere una teglia e spolverizzarla con la buccia di un limone e infine mettere il farro, condire la superfice con altro parmigiano e infornare. Se volete si può aggiungere a piacere mozzarella o altro formaggio.
E' buonissimo.
